How is Sour Cream helpful in Cake Recipes?

Sour cream adds richness to cakes and improves the texture. This can be attributed no only to its high fat content, but also the boost of acidity which softens the strands of gluten in the cake batter. This results in a softer, more tender crumb.

As an added bonus, the addition of sour cream doesn't thin the cake batter, which is why we often use it in cakes with "add-ins" like blueberries, pecans, chocolate chips and more. Some examples are our Lemon Blueberry Pound Cake, Pineapple Pound Cake, and Toffee Pecan Caramel Cake.

    1. Hi Yvonne- So glad that you are enjoying the site! There's not really an easy rule of thumb for how to add sour cream to an existing recipe. There may be some trial and error involved ;0) - Usually our sour cream cakes contain less liquid than for instance our buttermilk cakes, etc. I would just test out some of ours and find favorites that way!

Most of our favorite cakes have either sour cream, buttermilk, or cream cheese for a little added richness & moisture, plus a slight boost of acidity (which helps the texture of the cake).
