How to make an Easy Strawberry Cake
Although you can easily find strawberry cake mixes at most grocery stores, we prefer to use white cake mix and then add a nice flavor boost from both pureed strawberries as well as strawberry jello.

- To make this recipe, prepare three 8 inch round pans by greasing, flouring, (and we also like to add circles of parchment to the bottom of each pan).
- Next, add all of the ingredients including the white cake mix, strawberry jello, flour, eggs, vegetable oil, milk, and mashed strawberries/strawberry puree. (By the way, I love that this recipe calls for real strawberries rather than just the jello. It really does make a difference in the strawberry flavor)!
- Now, it's just a matter of dividing the batter between the pans and baking!

Strawberry Cake- Doctored Cake Mix Recipe
This easy Strawberry Cake from cake mix is fluffy, tender, and delicious. It uses real strawberries and strawberry jello for a delicious boost of flavor.
Ingredients
- 1 box white cake mix ( 15.25 oz) (432g)
- 1 small box ( 3 ounce) (85g) strawberry Jello
- 3 Tablespoons all purpose flour
- 4 eggs
- ¾ cup vegetable oil ( I used canola oil)
- ½ cup milk
- ¾ cup pureed ripe strawberries (You can substitute with frozen strawberries)
Instructions
- Preheat oven to 325 degrees, grease and flour three 8 inch round pans or two 9 inch round pans
- Put all ingredients into your mixing bowl and mix on low speed until the ingredients are blended. Then increase speed to medium and mix for approximately 2 minutes, scraping down sides of bowl mid way through.
- The pureed strawberries should be well blended into the batter.
- Bake for 30 min. or until tooth pick comes out clean.
Notes
This recipe works for easy strawberry cupcakes also!
Freezing: The strawberry cake mix layers can be baked in advance and frozen for up to three months. Individually wrap each layer in plastic wrap followed by foil. When thawing, keep wrapped for 30-45 minutes at room temperature before unwrapping and thawing to desired amount for assembling and decorating.
I wonder if you can use half the puree and Jello mix-if I am looking for more of a lighter pink color-will the strawberry flavor still come through? How long to bake if I am using a 9x13 pan? I made this before and it was amazing. I was asked to bake it again but would like a more lighter color cake.
Hello! Most of the color comes from the jello and so I think that using half of a box would still give you strawberry flavor and will lighten the color although it will still be pink. (I don't know if it will be as light as you would like, but it will be less bright.)
I made this!
I substituted white cake mix with my older box of French Vanilla and the 1/2c milk with 1/2c half and half (decadent). This cake was so moist and had an exceptionally tight crumb. Likely the best cake I have ever made to date!
It didn't last more than two days in the house!
I used a Bundt pan, because it was new and I wanted to try it out.
I love your recipes and I'm looking at the Lemon cake next ---I would love to know if I can do both Lemon Pudding and Lemon Jello in the recipe for that one?
Hi Dawne, so glad that you liked the recipe! As for the lemon cake, we really like that recipe but if you'd like to experiment with pudding + Jello, it would probably work also.
We haven't tried that combination exactly but we have several recipes that call for 2 or 3 Tablespoons of jello powder (whatever flavor cake we are making) for an added boost of flavor and it always works well.
I love love this cake! This is the second time I have made this cake. It’s simply delicious!! The only thing I did differently was pour a half of strawberry purée on the top and then I used butter cream icing and swirl it on top and caught the puree. The best

can I use buttermilk or sour cream in place of the milk? in this recipe
Hi Jean, I would think that buttermilk would be fine--the sour cream may work too- I just haven't tried it with this particular recipe and the proportions are different than the other cake mix recipes we have that call for it.
should I cook the puree strawberries on the stove before I put them in the cake? or it doesn't matter either way?

I’ve made this recipe many times in the past few years & it’s always a hit!! I found this strawberry puree recipe I really like & it includes sugar & lemon/lemon juice. I’ve I used that puree instead, would any of the other ingredients need to be adjusted?
Hi there! It would be an experiment but it seems that you could just substitute it. If it is a lot of sugar, it is possible that it could effect the texture a bit but cake mix recipes are usually pretty forgiving- I would think it would turn out for you!
